Ugh, I think Heathrow is one of the most overcrowded ridiculous airports to fly through or out of...too many trams, exterior stairs, long hallways connecting buildings together. A "2-3 hours" is almost not early enough, I'd allow 3 minimum, and with that, you will have not even a minute to buy a liter of water in a gift shop past security. Fact. Go earlier.
New York will be business as usual.

I don't know about Heathrow specifically but at least around here I know Montreal is dealing with insane queue wait times during Christmas break.

I've taken this flight plenty of times and it is not that bad, I go by bus and I'm always on time.

Huh? New Years isn't really an airport/airline holiday if that's what you mean. If anything it could mean some places in the airport are a little short-staffed, from security to gate agents, but crew and flight schedules aren't cancelled or reduced from any other saturday or sunday schedule.
