can I rent a decent apartment for sub-€350 p/m for 2 or 3 months soon? I've got an unexpected window of free time/money so want to do this soon and only have a few requirements:
-must be able to rent on a short term basis legally
-interesting city/region
-not prohibitively cold
-friendly locals
-not too high a cost of living (food and transport basically)
(a decent amount of english speakers would be a bonus but isn't essential)
happy to consider at anywhere, maybe even outside Europe, but I'm not sure how realistic that is...?

Spain, outside of Madrid/Barcelona, and the shitty Ibiza-style holiday hotspots, is really cheap. Malaga, Sevilla, Valencia, Cadiz, you can pretty much get your own apartment for the budget you said in the OP.
Pro-tip: get an account on AirBnb and select a whole month (30 consecutive days, doesn't have to be just one month) and hit search. Then choose your $$ limit and drag the map around the areas you want, you'll see the offers. It probably won't be the whole apartment, just a room.
If you want a whole apartment for $300, you have to go to Eastern Europe. Hungary, Romania, Ukraine are my suggestions, beautiful places.
