I'm heading out in January to do my first term WWOOF'ing. No clue how it's going to be, but I expect hard work and healthy food, so I can lose the flab I have on my stomach.
Also, I'm so, so sorry, homely elderly Japanese farmer couple, but my experience with quiet, manga-loving girls is the exact opposite of what you think.
I'm sorry your daughter-fu isn't who you expect.
I stayed with 3 hosts in Japan. It is important to clarify beforehand:
1. how well can you two communicate
2. how much time are you expected to give
3. what is your level of interaction with the host (not just "get your food at gtfo")
4. how many WWOOFers are staying at the host?

What visa did you enter on? My embassy wants me to enter on a working holiday visa, which requires a fuckload of paperwork and cash to get.
