Rothenburg alone is nice for a day but there is literally nothing interesting. Go visit Nuremberg, Bamberg and Würzburg and you have a nice multiple day trip.

if you are in the south of spain
malaga is a great place - not too small - not too big
has a train system that leads to torremolinos in the west for touristic fun (or pain if you don't like that stuff) - torremolinos has miles of beaches
or go east by car to nerja and almunecar (this last one is quiet, off the beaten track and used mostly by spanish as their place to tour)
rental car is easy in the south - usually rent a small car for a week for about $100 US

I would rather go to Granada and Ronda, mainly because of the ancient history, but also because I found the cities quite charming on pictures. I think my gf would maybe liked Malaga or Seville more than me, because of shopping, tourist attractions, etc

Ronda is very nice after 5pm or so and all the bus loads of chinks have disappeared from the bridge. It's a small town, 2 days is plenty, but worth staying in.
Anyway, I came to guys thread to mention Granada. It's romantic as fuck, not a hidden gem really, but not completely crushed by tourism either. That's the nice thing really, 75% of tourists come to see the one big site in a smaller place and then go, but these small towns have plenty character on their own.
Get out of the cities and go to the countryside if you really want romance. Lots of cities look good in pictures but the atmosphere is rarely much different than your own.
