Good questions, but coming from the wrong direction. In most cases - or, most cases of it being done well - it'll be a character that is an idealized, "better," version of the creator's. It's meant to be representative of them, after all, so it helps if they can relate to it.

So, if someone has social anxiety, their character will usually be the life of the party, or a brooding loner, or whatever. If they're autistic, their character is an expert in the field(s) that their autism causes them to focus on. Etc.

Nine times out of ten, the animal(or mythological creature, or whatever) is just an animal the creator likes, though in severe cases, it might be something they, "identify with."
