Personally I find the TigressXPo shipping to have been done to death (though not nearly as much as nick and judy). It feels like the only reasons people even ship them is because tigress gets the most screen time and development out of the five (which is a shame) and because she and po are of similar heights, not because there's any visible chemistry between them. If dreamworks really does plan on making 6 movies I honestly hope there'd be no romance involved or at least tigress and po keep that brother sister thing they got going on.

Originally, Shen's parents hated him because he was weak and because he was albino, and white is seen as the color of death in Chinese cultures.

Furthermore, it was said that the Soothsayer was the only one who really cared for him, and that's why he keeps her around in the final movie and tolerates her bullshit.

I'm fairly certain there were other things as well. In general, the early scripts of the movie gave Shen a really sympathetic backstory, and I'm not sure it's such a good thing to make the audience sympathize with a genocidal maniac, so they cut all that stuff from the final script.
