I have a checklist that I've never been able to 100% mark.

I've been into characters being captured, confined, and made into things for awhile, but depending on how much they struggle, or depending on what characters it's actually being done by, it can turn me off. Slavery/experimentation is nice and all, but when it's done by characters that are practically gods that cannot fail due to wish fulfillment nonsense, it ends up usually turning me off.

Mental shift is nice, but there's usually a line that's crossed where it ends up being "i'm raping your mind in a horror movie fashion to make you permanently my x", and depending on how the writer/artist handles it, it can either be great or awful. I don't think species matters, just make sure it's sexually exotic.
Take your pick from cocktongues, cocktails (hah), cockudders, multicock, dicknipples, multibreasts, hyper and so on. Or mix and match. Maybe each subsequent experiment adds another feature.
You could even make the poor sap a chimaera, pic related.

The poor sap be milked periodically and exhibited in some twisted display/demonstration for some seedy underground society in the end.

Oh, he might try to escape as well, but that just leads to strict punishment, perhaps in the form of more... experimental procedures. Soon even the dream of escape is dashed as he reflects on his freakish form that would never permit a successful re-entry into his old life. Perhaps his captors break him mentally by declaring the permanence of both his changes and his current predicament, rendering him at least docile and compliant for the time being. Perhaps there are others in this facility with him, subjected to the same horrors. And it might be driven into them that they are merely things to be used, fresh canvas subject to the twisted imaginations of this project's overseers. They are no longer human. They no longer have any control, to the point where their bodies are no longer their own. And to cement that point home, they are collared, and dragged about the facility by this leash.
