Just from looking at the pictures, you may have to be more careful with the gray version due to the antennas at the back of the head.

For the grey one (VF-31F), they included a replacement set for all three of the antennas on the head.

If you only have budget for one I suggest you go for the variant which stood out to you the most in the series. The blue one (VF-31J) is the hero's first valk but personally I liked how Hayate inherited Messer's plane halfway through the show.

Like the other anon said, Draken transformation to Gerwalk is a pain (but manageable). Not much difference between the two Siegs though.

The VF-31F is cheaper than the VF-31J right now. just pick one that's cheaper, if you don't care for their color or head.
Their transformation is the same, the QC is the same.
