It's a legacy sacred cow they haven't killed off yet. Roleplaying games which use more modern design principles (i.e. ones that aren't just copying dnd) generally do have just one number for their equivalents of ability scores.

Because the anime industry's financing model is wonky. An anime makes money from blu-ray and merchandise sales, and those are hella expensive. People in Japan might catch the occasional show from tv, but anime as a serious hobby, as in investing your money in it, is niche.
You can probably guess what kind of shows make the most buck. Consequently, weird anime nerds spend their money on BDs and merchandise on shows that have the fanservice and/or the girls.
This is why harem shit and stuff like that with bland, easily self-insertable main 'characters', are common and make enough money to break even and profit, and so every new season has them.
Nips are also bad at capitalizing on foreign markets of anime, so they mostly rely on domestic sales only, and those sales are mostly consisting of the hardcore male otaku.

That's true of the D&D classes, but not true of the terms "sorcerer" and "wizard" more generally.
Although they're generally used interchangably these days to mean "magic user," sorcery is specifically calling up magical beings to do your bidding; summoning, essentially. Historically, that's how most people thought magic worked. It wasn't a matter of superpowers, it was having invisible servants.
Wizardry is general secret knowledge, which might include things like alchemy, sorcery, historical secrets, fortune-telling, etc.
So, you could say "That wizard is a powerful sorcerer," meaning that the weird old scholar knows how to summon spirits to serve him. You could also say "that sorcerer is a powerful wizard," meaning that yonder summoner knows a variety of dangerous lore, not just summoning.
