What do gelatinous cubes taste like
Probably whatever the walls and floors taste like.

They taste briefly of acid, then your tastebuds melt.

Salty milk and coins.

Sour or bitter. It depends on if their PH is below or above 7.

I'd like to think raspberry jelly, but it probably tastes like burning

Jello. The flavor depends on the color.
Smell plays a huge roll in taste. Assuming they're acidic that would mean a heavy oppressive vinegar like flavor before your sinuses burn out. I'm basing this entirely on that time I improperly disposed of high molality hydrochloric acid.
