How come so relatively little RPGs focus on (or hell, FEATURE)

fantasy is based on mythical germany (nibelungen, dietrich), england (arthur, robin hood) and skandinavia (beowulf). ireland figures into it as well, i should say.

Very, very little. Greek mythology gets more representation (through a lot of the Monster Manual) than anything Irish.

In every game I played we were in some kind of renaissance italy.

We had the technological advancement of the renaissance except guns, a bunch of city state and warring nobles that want to hire mercenaries, and nothing even going close to the middle age.

They just say it's france iron age when it's italy renaissance.

Renaissance d100 (which you should probably check out) did nicely by dividing magic users into alchemists (scientific, logical, scholarly, magic is based on the four elements, need to regularly create philosopher's stones which store their MP) and witches (pagan, primitive, oftentimes satanic, more versatile than alchemy but it's really nearly impossible to get anywhere without at least some satanism involved).

What is GreyHawk, Forgotten Realms, or Golarion?

I mean non of them feature Spain after it made it big from the new world. However that is a not small thing to put into a RPG setting because of the huge influence Spain had after that.

As for Renaissance Italy take a look over at Water Deep in Forgotten Realms. It is a lot like Venice in some ways.
