I thought the whole nature theme of elves played into pagans pretty well. I'm writing what pagan themed elves would be like, currently they practice ancestor worship and venerate spirits of the forest. They also burn people in wickermen. What other interesting aspects of European pagans can I incorporate into their design.

If you don't have unthinkably swift, naked, and fanatical shroom-fueled, heart-eating, axe-wielding berserker-priests you're doing it wrong.

The elves have a holy mountain where their philosopher-god (secretely a dwarf) lives. The afterlife is under the mountain, accesible to elves who died in battle, where you sit by the god's throne.

Keen.
Seems weird to worship your ancestors when you already live for a thousand years because wouldn't many of them still live or at least remember what they were like?

Even more reason to venerate them once they're gone. It can be hard to lose a loved one after a paltry human life span having to go on without their wisdom. Times 10.
Have the elves live in the north/north-east, in a geographically vast area but sparsely populated. No one knows just how large their population is, so collective elven anger is very dangerous (think wild hunt from warhammer fantasy or the dothraki from GoT). It's also intersting having elves as being less advanced on a technological and societal level than humans.
