I'm surprisingly okay with this, all things considered.

Firbolgs are good.

I preferred the ones from the old AD&D novels. The 5e ones look like you let tumblr colour an old british political cartoon about the irish.

The race itself is really fun to play.
My only real gripe is that instead of reworking firbolgs, these guys should have been a rework of Voadkyn who are already elf-like giants that can magically disguise themselves as humanoids...

Firbolg is the name of an actual folkloric being though (lack of resemblance notwithstanding) so you can pretend that you're including them in your campaign as anything other than a D&D creature. Some people find that important.

What are they supposed to be?
They look pretty neat.

Firbolgs were an already established race with relatively little changes. Voadkyn are more similar to what Firbolg are now and were less used in previous editions.
If you're going to bring folklore into it, previous incarnations of firbolgs were arguably a lot more similar to the myth than 5e firbolgs..

The myths can't even decide whether firbolgs were bigger or smaller than humans. Some can't seem to decide how many LIMBS they had. I don't think that's overly much an issue.
Eh, I still don't like how little flavor they have. They're not gianty/trolly enough and their culture/backstory doesn't make any sense in the context of how humanity developed.

They don't get significantly less than, say, halflings or gnomes, it's just that since those races have such a long history of being PC races behind them we tend to associate more with them.
