Im a fairly new DM. For the most part i think im doing well, but im having trouble figuring out what i should have the CR listed on my homebrew monsters. how do you guys determine the CR of your mobs. also what do you think the CR of this would be.

Cr is nonsense most of the time.
Throw what feels right at the party and let them deal with it.
Note that if they're outnumbered they're at a disadvantage and if they outnumber the enemy they're at an advantage.

CR is a next to useless mechanic that almost no one uses. If you want to get a ballpark figure for the sake of calculating XP, try comparing it to a similar monster.
