In melee combat you can't afford to open yourself up by trying to grab someone's helmet because that person will just stab you.

From time immemorial people have worn outlandish non-functional things into battle for psychological purposes but us moderns have been so removed from the warrior ethos due to the advent of mechanized warfare we tend to dismiss the ritualistic/spiritual aspects of combat which were obvious to previous generations.
