Is there a game that accurately simulated how much constant violence/danger/combat damages someone's psyche? I find that most games shrug that sort of thing off as 'it just works'.

Trail of Cthulhu gives you a big Sanity hit if you kill someone. So yeah.

Rogue Trader has Insanity and Corruption which can be gained from fighting certain enemies or at the GMs discretion

In WFRP, each critical hit you suffer makes you gain an insanity point.
Let the players interact with the local civilian population and see if they realise how quickly they're ruining relationships or burning the towns down.
Have normal, everyday NPCs with families to support and friends around them for the PCs to interact with.
Have a civvie NPC accompany the PCs for an adventure and witness how cutthroat the PCs get; let the NPC's mind break in some way or let them get corrupted into the murderhobo life.
