Displacer beasts need to be feline because their arch-enemies are blink dogs, which are canine. Its a magical cat vs magical dog story.

Maybe instead of "displacing" everything you can go with various other abilities?

Blink dogs are displacer beasts natural enemy, and can teleport short distances.
Maybe have some quantum rabbits that exist in multiple places at once until interacting with them forces only one to be real, and your math is good enough you can predict which one?

I don't think I've ever been able to picture in my mind what the displacement looks like. Is it still there but projecting a version of itself some distance away or is it "invisible" while the displaced version does the attacking?

None really. As others have said the beast is based on A.E. van Vogt's Coeurl that appeared first in the Black Destroyer and later in Voyage of the Space Beagle.

The pre-3.X versions did their damage with tentacles (2d4/2d4). The claws (1d3) and bite (1d8) in 2e were fairly pitiful.
