I started with II and always found III easier. It's much easier to grind early without two much losses with the bigger battlefields.

For beginner level it's usually sufficient to rush for a capitol, fast explore the map, be efficient with your starting units and in the first month get up to T5 unit production.
On high levels you have to "break banks" (clear resource sites) with starting units to get resources to make T7 on week 1. You shouldn't need to do this vs normal AI though.

Of the spinoffs I'd mention the HoMM online TCG which was great and Clash of Heroes, which was, again, pretty damn good for what it is.

One of my dream projects is working a streamlined as fuck HoMM clone with CoH's cutesy sprite-art.
