How would run a game where the players are monster hunters a la Bloodborneand make it fun?

Would you consider the inclusion of trick weapons to be a bad idea? Threaded cane for example; A quarterstaff that with a bonus action becomes a whip. What monsters would you employ?
The percentage of each pillar? In my opinion, exploration is inevitable and not a true pillar so I'd love to run a 50% combat and 50% RP game.

Because if you're going to make a game based on Lovecraftian supernatural horror, why wouldn't you make a bossfight with some crazy-ass suicide cult wizard?

Maybe some Call of Cthulhu variants as well like delta green.
seems pretty hard to do as it is difficult to implement all the anime style dodging onto the table top, perhaps you should make fights be almost always against large single targets and use a board with the monsters having abilities and attacks based around affecting tiles and areas rather than targeting players directly giving them a chance to avoid attacks besides doing a lazy dull "roll to dodge"?

Well, I wanted use the Bloodborne theme for the campaign but definitely don't need to use the dodging or blood vials or anything. Just want some cliche monster hunting with some saving the world sprinkled with unique environments fitting the theme. Dark Fantasy a la mode.

Have the monsters come out at night. Everyone locks themselves in doors giving the players the run of the streets to hunt and kill a monster, trying to stop it from breaking into homes or causing to much collateral damage. Dead monsters can be sold or their bodies researched by an NPC in gruesome fashion, giving the players advise on its anatonmy and how best to kill others of its kind. Add a longer running plot about some one in the city letting these creatures in or being responsible in some way and you have a good investigation for your players to embark on whilst staying up every night to clear the streets.
