Have you seen the recent Castlevania series? Dracula had a pretty good reason if maybe slightly over the top for what he did/doing.

Vampire are still related to humans they are basically just "advanced" humans in a way. So human emotions, aspirations, etc.. are still present. If you wanted to you could essentially write them as human then at the end just write it so they happen to be a vampire then add in the personal things for a vampire (can't be in sunlight etc)

It's not like there isn't a huge pool of vampires both as protagonists and antagonists featured in media to draw from

Same as you do with any non white CIS male character. Make race (or whatever vampirism is) a supporting feature of their character rather than the defining one. For example, one of my games had an elderly scholar who embraced vampirism in order to continue his studies for centuries. His thirst for knowledge constantly competing with his thirst for blood, and you could never be quite sure which side he'd favor today.

Lolno, CV Vampires are special kind of absolutely void of humanity CE Vampire, you've only been given that impression through the poor english translations and to boot localizations of the dialogue held between Dracula and opposing Belmonts.

Dracula was literally an asshole who fucked his best friend over, getting his wife killed and ritually scarified to make the very weapon that would end up opposing him in the end, his "tender side" barely had any scraps left in it at all, and it's his very Job description to act as the opposite of god (A world without god) through use of his powers, which involve basically driving men to their worst deplorable state of being, driving them mad, using a curse to extend this power across all of europe causing a massive war akin a Chaos Incursion, and his ability to seize any souls and reincarnate them as he pleases that die in his domain in some batshit insane Super monster make tycoon thanks to his power over Death, who supplies him with all the BS his litters his castle in.

What about a vampire that knowingly chose to be a vampire because they knew that a single lifetime wasn't enough time to complete their life's goal, whatever that may be. Being a vampire is simply a means to an end for them.

Not OP, but; glowy green eye chick might be the closest thing to a literal vampire there. Red-dressed masked chick is much more figurative in the sucking you dry and leaving you a dessicated husk department. Those are sluttily dressed members of each of the great clans of Legend of the Five Rings.
