Just put her on the board and you win, you don't even have to legally summon her. If a judge gets called over because you didn't pay the mana cost or even because you're playing her from outside your entire deck, he can't do anything about it, because you can't lose the game.
If the opponent tries to use removal, just ignore it and keep her on the board. Breaking the rules has no consequences because Platinum Angel explicitly says that you cannot lose the game.

In general I agree with your points, having a cohesive theme gives the term "angel" a meaning in the setting and staying away from anything too real allows them to get a bit more creative and simultaneously avoid stepping on anyone's toes.

Its interesting but not really a whole story or anything. The original playtesters of alpha told Richard that they had a card that made them automatically win when they played it, he asked them to show him the card and he showed Time walk which at the time said "Opponent loses next turn"-- basically time Walk took the opponents turn and made it go back to you, but it was being intepreted as your opponent loses the game next turn. He reworded it to the worsing we have now, where you get an extra turn rather than making your opponent lose one.

Nahiri sounds the alarm, Sorin doesn't come. Furious with Sorin she goes to search for him, but as she has never been to Innistrad before she can't find it. She ends up on some other plane, gets fucked and trapped for 1000 years while being really angry at Sorin for not coming to help her AND not coming to rescue her form whatever fucked up place she's in. She manages to get out over 1000 years and everything goes the same way.

If you have to retcon published materials or pretend it doesn't exist, you goofed. Either you didn't plan ahead well enough, or you made a mistake and had to trash what you had.

Also, it may not immediately matter to the story but it matters to the character. If Sorin threw her in the vault and then pretended he didn't know where she was to people who didn't know the truth, why did he do it? If he forgot, it's a more interesting detail about planeswalker memory these stories don't ever go into enough. If it's neither, it's bad writing okayed by a team that didn't put enough effort into their project.

And I'd like to see one fictional property that's been around for 25 years that's changed creative hands that isn't plagued with retcons, continuity errors, poor writing from trying to "correct" those things, and numerous fan complains. Being slavishly devoted to insignificant details isn't any worse than ignoring important details, like whether or not a main character locked someone in a magic prison or not. This is the action of a main character, relating to a set of characters that the writers made here important. Minor details can inform the fan just as much as major ones. And while in this case it's obvious Wizards didn't know what they were doing with this situation yet, and Sorin's comment from Akoum was pre retcon , not telling us what changed isn't something to be ignored 'cause I like Magic.

I'm not expecting every writer or group of writers to have every possible answer thought out, but I'm not going to ignore it when that call character 1 blue in one chapter and then red in another. I know characters and stories are reworked after the writers see the reactions (Sorin's line and Nissa's whole character), but throwing up your hands and pretending what came before doesn't matter isn't "good" writing by any means. Whether or not it affects my enjoyment of the new version of the product (better or worse) doesn't mean it's not a crap writing method.

Going back to my Star Trek example, Star Trek has some great writing and stories over 50+ years, but it also has some garbage writing that was ignored or retconned because wiping away your mistakes is easier than fessing up to them. Ignoring or erasing old details that don't match up with current plans is easier than working them in, but that still reflects on the story overall.
