An owlbear's bite wouldn't be able to tear flesh as well as a standard bear but it would be great for picking flesh off. It would still be very damaging.

Anatomically an owl's beak is not a very good weapon. It's not designed to kill. Sure if the owlbear manages to get a good bite, the force is worse. The problem realistically speaking is being able to really get its relatively small beak to hit with that flat fucking face.
