Let's say your a nercomaner but the standard random villagers that stray into your path aren't cutting it as skeletons.

What you're describing is animating objects. Git gud and start studying transmutation.

Those would be called golems.
If you're a necromancer, thematic strength probably comes from older/more famous/more hateful corpses instead of random village mother #4.
If you are just making dudes out of raw materials, and not reanimating corpses, than your making constructs, which in D&D terms in conjuration, or maybe artifice.

That is necromancy, in a sense, since flesh golems and bone golems have necromancy speolls as part of their creation process. However, it has nothing to do with OP's question.
