My general advice: Don't run Monster Hunter in D&D 5e. It's not designed to actually challenge the players with a single boss monsters, they have too many tools at their disposal. If you still do, don't do what it says in the pdf and instead give the monster several full-valued turns per round.
Oh and there's also Doodles & Dragons by a different author which contains full stat blocks iirc. Can't say anything on the balancing of these.

Thanks for the advice, our group is a bunch of old friends so it won't be a problem if a monster hits a bit harder than expected if we all agree the narrative and the story are worth it.

Until the Monsters started getting multiple full turns, the problem was usually it not hitting hard enough.
Mimicking gameplay from the series, like the monster running away and needing to be chased is pretty much infeasible without much rules doctoring or moving away from the source material. Stun effects are an effective death sentence on a monster, especially if it paralyzes.
