World-building-wise, is there really any benefit to a global criminal underworld using a proprietary currency of non-granular tokens ala John Wick?

The John Wick coins were non-granular because they typically did not purchase low priced goods or serviced, and even when they did, their culture was such that they would tip high regardless. See: buying guns, ancient maps, tipping a luxury tailor.
Seeing as a night in the Continental is probably not cheap, even if you could afford only a few gold coins, it's still logical to pay an entire coin per night or per stay seeing as it is a safe zone and probably a multiple star hotel.
