If you owned a tavern that the PCs start in, what sort of food would you serve? Me? I'd serve crab legs
I'd probably say just divide a few things up. Possibly like Vitamins, Proteins, Sugars, Fats, and Hydration? I'm not biologist or nutrition, but those seem like a few basic stats you could use fairly well. Meats give the most protein, fruits give good sugar, vitamins, and hydration, but are rare and give no protein, few vegetables give good protein, but give little else, etc.
in terms of dnd 5e, more or less hit die recovered depending on the quality of the food

Rarity, Nutrition, Preparation as your main stats.
The amount of nutrition points a dish gives is (Nutrition+Rarity)*Preparation.

I think the key is to not get too intricate or realistic.
