Minimalist is good when the piece´s shape is related to their function, so they better represent the nature of the game.
Pic related, it´s a possible setup from lichess.org. Bishops, rooks, queen, king (octogon), and somehow knights shapes are related to the way the move. Pawn is would be harder to represent, but in this case it´s the simpliest of the shapes, so still pretty accurate and coherent.
Position is open sicilian defense, Grivas (or Godiva) variation.

Also, OP´s pic is an example of terrible minimalism. King´s have four sides and bishops are just nonsense.

Having a random shape would be just useless. Having something with four sides for a piece that moves in eight directions is misleading.
