It's also worth noting that the Silmarillion as published is not necessarily correct, it's just how Christopher wanted it to be. In some letter or note Tolkien wrote Ungoliant to be a servant of Morgoth.
Another interesting one is Tolkien's essay Morgoth's Ring, which shows a completely finale to the Siege of Utumno. In this version Morgoth confidently confronts Manwe, only to find, to both of their surprise, that he is now weaker than his brother. Shocked by this, he simply surrenders. Compare this to the book where Tulkas simply slaps his shit.

Point being, a lot of the Silmarillion isn't concrete, and there's often multiple, vague answers to these question

My logic is that if a humanoid being has to rely on machinery to believably take it down, it's too big to have a personality of its own.

Dragons are definitely personalities. They need to be able to have face-to-face conversations, taunting party members, and the party needs to be able to anthropomorphize them easily. Humans and dragons need to be able to interact physically with one another, without humans just getting squashed by a continent-sized fire lizard rolling over itself.

If dragons are to humans as cats are to mice, dragons should be 500 times the size of humans by body weight --> 40,000 kg. The extinct Paraceratherium would be a good comparison.

I did have a larger dragon at one point -- a dracolich, in fact. He was about the size of a cathedral, but regularly transported his mind to his golem servants a la Harbinger/Ultron. The final encounter of that campaign took place in his shattered ribcage as the party fought through golems to get to his phylactery/heart.

i typically wouldn't go heavier than say a sauropod, excluding titanosaur. Things the size of Anacalagon don't work in the fantasy realms I prefer.
