The way I do it is I make a set of rules, based on some kind of moral ideal or alignment. Write them down before starting.
Then I follow these rules with crazy devotion. Most of the fun is seeing how "technically right" I can get, as I see the whole paladin idea as a messed up absolutist trying to make a gray world black and white.
That is why they get so much power, they strictly follow the rules to the point of con, so they can spend more points on other pros. Like a more sublte idea based min-max setup, rather then strictly stats.
