I love this. I once had an entire city based around an old watch tower. The tower had been fitted with all kinds of buildings jutting off from the sides and it was all kinds of ramshackle cozy!

Not him, but the only way to that level seems to be stairs. In any case, it could just be a place to restock. There's only one dock for huge cargo ships and the rest could be for local fishing vessels.

This is the village of Ronda, in Spain. There's plenty of IRL examples of old towns and villages to use.

I've been working on creating some village but I'm hitting a wall at how to fill the land plots, there isn't a river but an hill is overlooking the settlement and the lord reside atop this hill.
There has been an influx of peasants seeking shelter in the village lately and slums began to form outside the walls surounding the settlement. Most of those walls are a mix of wooden pallisade and proper stone wall although they aren't that thick nor high as money was short for the rullers.
Anyone can give me pointers?

Hmm, it was a farming village but when the lord relocated his seat it became some kind of military village with smiths working for the small army garrisoned there and everything that soldiers/noble brought with them. In time it became this mix of military/farm.
Before the refugees moved in there was roughly 700ish people in the place, now there's about the double of that. Might have to fiddle with the numbers a bit.

The north wall would stop there because the hill would start getting steep there, my brownish scrawling would be cliffs to stops any camping armies, the pink would be the slums, some would even be on land used for farming(the north side) but since it's left fallow for the time being they're not kicked out.
The green part would be the original farming village while the grey part would be the military/higher class who settled there after the lord moved in. Not sure if I should make most of the roads in the farming part outside of the walls and use them for farmland.

I assume you're talking about the moat. If you look closely, it's deeper than it may seem at face value. Besides its defensive capabilities, it would likely have some fish that could be eaten and of course the water could be purified.

It's a stone motte and bailey castle. That's not just a simple watch tower, it's a lord's home. The little town probably has stables, a blacksmith, servant quarters, barracks, and maybe an inn and shops to function as a small market place.

Walls should connect the steep bits; you'll want a fuckoff-large garrison or fortification at the confluence of the road leading up to the keep and the edge where the wall meets the increasingly forbidding ridgeline.
Unless there's something preventing it, the (assume keep is north, with the road leading off pointing north-south) northwest spur road should meander less and look more like the original route the south road took to elsewhere. That makes that dense little knot in the middle the original village square in a more natural manner; right now it looks more like a ring road running around a developed city. Unless there's a very good reason the NW road is newest. It's your map, do whatever.
