I think it'd be cool to portray them as shamanistic isolationists that never kill or attack anything alive and instead ritualistically eat the dead and see it as a generous offering (which some might disagree with) and do it also so that necromancers couldn't use their bodies. They could be powerful healers, too, and consume the plagues inhabiting someone by making a potion with a body part of theirs (the more deadly the poison or disease, the more they'd need, all the way from curing a cold through a bit of hair to needing an arm to cure cancer) and then ingesting the body part.

i worked with them at a zoo, theres like less than a hundred specimens left in europe, most of them are inbred and wrecked with disease, theyre gonna go extinct in our lifetimes, pretty fucking sad. They are very interesting animals, a true remnant of the old world
