My least favorite is the generic "it's a winged lizard that mid level parties fight". I generally prefer them to be rare and powerful, but I'm fine with a wide variety within those parameters.

In the setting I'm working on, dragons are immensely terrifying creatures capable of leveling cities, each the personification of the seven sins, with drakes embodying only single sins. This isn't to say that they're /evil/, just very much swayed by their nature and urges. So a Parthunax-type is possible, if you really want, but for the most part they serve as threats to entire kingdoms.

I like variety, but for the large and complete Capital-D Dragons? I prefer them to remain individuals of extreme importance to the campaign. Kind of like an Onyxia BBEG. Extremely full of themselves with severe personality flaws but certainly able to plot and make conversation and impact nations when they get motivated to actually make a non-apathetic attempt of something. Having rivalries with each other makes a good balancing factor to push some to subtlety.

Each dragon is a unique, boss-level kaiju, like the tarrasque but (mostly) smaller. Only rumors in a given dragon's desolation will give any hint to its appearance and behavior, and that doesn't give much clue on how to fight it. None of this "black scales -> let's all cast acid resistance" garbage. That takes away the power, mystery, and majesty* of a dragon and reduces it to a statblock. Pic related.

Creatures on the level of natural disasters that are only talked about in myth and rumor, the party never meets or fights them, but if they're lucky enough they might spot one flying in the distance, or if they're unlucky enough one might fly directly over them and fuck them over with hurricane-like winds. They can also see evidence of dragons all over in their travels, like craters or claw marks on mountains or unnatural lakes, or bones.

They're sapient and intelligent, but their intelligence is alien to mortal races. They would be capable of speech if they ever bothered learning, but they're solitary creatures so they never had a language or need for one. They can instinctively do the complex math required for powerful magic, in that sense they're like biological computers.

That's how I ran them in the last setting I did that had dragons. Basically background fluff and not something for the party to meet.

I prefer full on LOYALTY in such cases, stemming not from pure power but from a long cooperation towards a common goal (which might be already achieved and the dragon just stuck around) or a trade. The dragon will still obey without question, but they still have their pride, more so in public.

Many subspecies. Most range fall into the 'clever animal' category but some of the rarer types are fully sapient.

Personality wise they're all big largely solitary predators so they tend not to be friendly but also smart enough to try not to piss off other sapients as one of the few things that could pose a real threat to their long lives. However they're also all individuals so exceptions of all types exist.

Officially, the average dragon is much smarter and wiser than all but the smartest and wisest of humans.

Now, think back to when you were a kid. A lot of the time, what adults (who were much smarter and wiser than yourself) did didn't make any real sense to you, right? Well, it's pretty much that way when you try to understand why the average dragon does what they do. They have their reasons, and they seem to be good reasons to them, even if they're completely nonsensical to you.

But what DO they do? "Whatever they want," predominantly. The 'hoarding' behavior many (if not practically all) of them exhibit is a quirk of their psychology. Dragons are as much magic as they are natural, and because of that, a lot of what they are and what they do doesn't necessarily make sense. Hell, that's pretty much the definition of magic: Stuff that doesn't make sense. Why it got codified into the specific instance of "Dragons hoard shit" is like asking why rain forms puddles- it's just a natural result of how magic interacts with the rest of the world.

Dragons aren't actually prone to hoarding gold or wealth any more than they are anything else, it's just that that's the most captivating and consequently the most retold kind of thing that some of them collect. Others collect books, or insects, or wings from various flying creatures (not the entire creatures, just the wings,) or writing implements, or neat-looking rocks, or any one of a million other 'mundane' things. But those aren't interesting to talk about or tell stories about, so the dragons who collect stuff like gold and jewels are the ones who get talked about the most.

In my setting they used to be sentient, once. Their ancient civilization developed powerful magic, got greedy, and tried to invade Hell to reach Limbo, kill Death, and become immortal.
The forces of Hell were pissed, and Celestials weren't very happy either (this war also led to the creation of Inevitables). They begrudgingly teamed up and completed a ritual to strip dragons of their sentience and magic.
Now dragons are huge and mindless beasts, though some powerful dragon mages have managed to hide in the distant corners of reality. Kobolds, their once slave race, have inherited their blood and sentience, but they won't follow in dragonkind's footsteps anytime soon.

Sapient definitely and individual. I'm not a huge fan of subverting the alignment tropes unless they have a sufficiently different upbringing than most of the rest of their kind.

I've sorta got a baseline behavior model in my head for each color of dragon and then just sorta modify it from there.

My favorite is actually red since it's a chance to be cruel, evil, greedy, and vain but with mindblowing intelligence as well. Raise armies, ruin kingdoms, seduce frost giant bitches and leave after the one night stand, briefly enslave a dwarven city just to remint your gold collection so it has your face on it (and leave most of them alive with a modest tip for the good job they did but the assurance that you'll be back for their services again and they better not make you ask twice next time), intentionally let your gold get stolen just so you can have the fun of hunting down and killing those responsible and taking their gold too. FUCK YEAH RED DRAGONS!

I don't really have a preference, and luckily since this is all a fantasy, i don't even HAVE to choose, i can just have both.
Their origin is similarly wide and varied.
Some are just a product of evolution, some were wizards and sorcerers who transformed themselves into one, and some are purely spiritual entities who merely took the form of a dragon because they happen to like it.

Metallics are definitely different. I sorta had this idea that they might be doing just as you suggested - i.e. doing things for kingdoms to garner diplomatic support. What I'm struggling with is coming up with appropriate tasks. Like, what does a King have going on that might require a bunch of Dragons to intervene?

In my setting the Metallics view themselves as an elder race and all the humanoids as basically children. As such they interfere with the politics and governance of the humanoid races "because they know better" whether the humanoids want them to or not. It's really neat when they behave like animals, make part of the ecosystem or break it, occasionally as in Monster Hunter. Dragons as only lower than gods, literal forces of nature is pretty great as well.

The dragons in my setting are mostly sapient, but they barely have any contact with the other mortals. The ones that aren't [sapient] are almost always afflicted by a disease that broke on their original continent, but there are some remnants of the strain in many places. Sometimes, greedy individuals abuse their power and subjugates villages and there's the "Feed the dragon or it will kill us" thing. The most powerful ones see other mortals as little more than insects and all that jazz.

But my special flavour is the 7th Dragon way. The True Dragons are literally Great Old Ones from Lovecraft. They are the pinnacle of evolution and one of them, Nodens, wants humanity to struggle so they can evolve, leaving only the strong and eliminating the weak. They make the wheel of life spin. Destruction brings about renovation, it's an infinite cycle.

I like my dragons to be reptilian rather than the more feline shape: they're more like huge lizards*, crocodilians or snakes, with or without wings, with some breeds tending towards more dinosaur-like shapes. Usually in my settings they, along with all other reptiles as well as creatures like wyverns, basilisks, cockatrices and hydras, are all filed refered to as 'serpents.' The line between species can blur, too: in one low fantasy game I ran I was going to have the players chucked into a 'dragon pit' which they'd discover was full of crocodiles - only for the otherwise regular seeming crocs to start spitting out fire.

I definitely prefer them as monsters rather than an intelligent race, but not stupid. A 'true' dragon isn't just a dumb monster like a wyvern, but it doesn't speak, it doesn't cast spells and it doesn't lead civilisations. However, it is smart: it knows has a dangerous, predatory cunning; it knows how to fight and hunt humans who'd try to hurt it; it might not speak or have a sense of identity like a human's, but it can probably come to understand some human language over time and start recognising names humans call it by; it can understand and encourage stuff like terrified humans paying tribute to it.

In one setting of mine, a renegade god made dragons by crashing the sun into the earth and embedding its shattered remnants into his creations: dragon fire is literally fire of the sun. But, with each generation of dragons that passed the dragon fire became more diluted, leading to the dragons growing smaller, weaker and less intelligent. Eventually most breeds lost the ability to breathe fire altogether and became the mundane reptiles of the world. Reptiles' love of warmth and basking in the sun is a sort of ancestral memory, a call back to their glory days.

In my campaigns they are always rather few in number although the occasional young one can be found in the wild. Standard DnD type of dragon, intelligent and powerful. I also usually have one taking on the shape of a human in some way.

I run a 'discworld themed' setting, which I call the "Disc of Kal-vortun". Here's how it runs dragons:

there are so many problems with that plan. its clear the DM was taking pity on the party.

how did the owl survive being eaten?
how did it crush the pellets?
even if it did survive and crush the pellets how did it survive the bursts of water?
and even assuming all of that worked, how did the dragon suddenly turn into a closed system?

ffs the dm had already had it vomit up 100 gallons of water (which should have ejected the owl, but lets just say it had a good grip on the mysterios draconic stomach bone it was using to crush the pellets).

that proves the dm knew the dragon had an open pathway up its throat for the water. an open balloon wont explode from water unless it is an incredible amount. and this is a dragon who is much sturdier than a balloon.

the water probably would have forced its way violently out of the availabe escape valves. so the dragon would be vomiting water like a firehose while its ass blew out. but it probably wouldnt explode.

and even if it did, its stomach would have ruptured long before it swelled up like a balloon.

so at absolute best this would have inflicted the nauseated status and dealt damage. anything else is either fetishist idiocy or GM Pity.

The VFD and Nodens revelations were sooooo unexpected. Another thing I like about 7th Dragon is that other beings can turn into one. Something like "Dragon is the final tier of power and perfection" so I didn't mind some non-draconic dragons (except Nyala, a wyvern, and Haze, an unholy amalgam of weird shit)
Using "specimens" as power sources is something I absolutely love. Putting them into an artificial humanoid life-form who has a rival complex? Even better.

Now I want to homebrew a 7th Dragon-esque setting...

I tend to treat them as bio-weapons. It is the original Tolkein version, and I think it suits "impossible flying lizard monster" best.

Current setting a species of small reptile men in the dinosaur period (evolution happens impossible fast, men were apes 1000 years ago) developed magical powers around fleshwarping. They built a sucession of better bioweapons in a self-oblierating arms race, ending with dragons. These destroyed their civilization then turned sub-sentient and feral as millenia passed.
