Half-races in general are fucking shit. They are always half-humans which just makes humans boring generic go to race. Half races adds nothing new or interesting. Half-elves are just elves lite for special snowflakes. Half-orcs are rape babies brute archetype. I'd argue that the limitation comes from statting half-races being a tedious affair so it's "better" to keep it to half-humans, and there should for instance be half elf/orc hybrids as well, assuming in-setting they had a common ancestor.

Not sure if there's species irl where one "central" species can mate with two species that cannot mate with each other, but I've never heard of that. Even in pairs with different numbers of chromosomes that produce sterile offspring, as is common in equine hybridisation, every possible combination of equines produces offspring as far as I know, eg zebras and donkeys, zebras and horses, horses and donkeys. Depending which is the dam and which is the sire the offspring can be radically different as well, though (for instance mules vs hinnies), so it might be interesting to play with that concept as well as the social impact of sterility in some crossbreeds (but not all- for instance half elf/orcs might be fertile since in most settings orcs are some form of altered or degenerate elf, and might have the same number of chromosomes or magical equivalent, while hybrids with humans might be sterile).
