I had some trouble figuring out how to include typical elves in my magic-less Hard Fantasy setting, as I wanted them to have some distinct biological features that would affect their behaviour in a way that sets them apart from humans.

By chance, I found an answer watching a short video about how caracals hunt: https://www.youtube.com/watch?v=V4e6PsA6mmI They have very sensitive hearing, and can turn and angle their ears to yet better detect sound. Wouldn't that be a good explanation for the elves' stereotypical big, pointy ears?

Why and where would they evolve such fine hearing, though? They could be nocturnal, and thus had to rely more on their ears than their eyes, hunting at night. Rainforests can be very dark on the ground even during the day, as little light filters through the canopy; visibility in cloud forests (tropical or not) is terrible as well.

Elves, thus, evolved as hunters roaming the rain- and cloud forest floors, inter-tribal sneak attacks yet intensifying the pressure to evolve excellent hearing. Some of them remained there, and went on to found Aztec- and Maya-tier civilisations, acoustics playing an important role in their architecture; others left their natural habitat, and migrated all the way to the poles. There, they were well-equipped to roam the taiga even in the dark of the polar night, and filled all kinds of niches from raindeer herders to ice-fishers.

When Man arrived from shores afar, the primitive elves of the plains and light woods in between were easily conquered and replaced; but in the cold north and the wet south, they yet survive and thrive, quickly assimilating human technology and innovations in statecraft to their ancient ways of life.

They are valued as alert scouts by humans exploring the unmapped depths of their continent, though their taste in meat of... just about any kind may be estranging to some.

Timescales are one thing I have problems with in general, since I'm not sure how long certain features would take to evolve; and in cases where there are comparable equivalents in real life (like my mammal mermaids' adaptations to underwater life, drawing on cetaceans and sirenians), those seemed to take a few million years.
The common ancestor of my homo sapiens sapiens and these beings would thus have to go so far back that, while common ancestry and later convergent evolution may be enough to explain an overall similar physiology, I struggle to come up with reasons why, for example, their faces would have evolved to look so similar to ours as to still be attractive (at least on occasion)—unless I went straight for a more alien beauty instead (think Zoras from Zelda).

Good thing I haven't touched upon the creation myths of the setting yet. If all else fails, I can always fall back on some cheap cop-out like the planet being some post-post-apocalyptic future earth or terraformed space colony, and the humans of the setting being a biological relic that was preserved on some generation starship (muh twin paradox), but I would rather not.

Well, I'm also doing a setting where I look at evolution, but since my setting has a bit of magic (basically, there's magic but the mortal races haven't learned how to use it yet), I decided that sentient races have some influence over their evolution through magical subconscious orthogenesis ( I expanded a bit on it in /wbg/, >>53228178 ).

For elves in particular, in my setting they stayed in more or less arid terrains and roughly 70k years before the setting's present they split off from Homo Sapiens (magic makes evolution go faster). They evolved their unique traits because they lived around cheetahs and lions and wanted to hunt like them, thus they evolved into great sprinters and daylight ambush predators, but lack endurance for long chases and have problems with heat management because they don't sweat much, thus they overheat quickly when performing strenuous activities.

Other humanoid races evolved similarly but took on other traits depending on their terrain and surrounding animals.

Ive read studies suggesting that animals with better hearing are affected much more negatively by noises that humans can easily tolerate. For example, the vaccum might not just scare your pets, but might be causing them physical pain.

TL4, so gunpowder weapons would be around and aplenty.

You bring up an interesting point. PC Elves (slaves or allies to humans) would be familiar with the problem, and probably able to make or buy special ear-muffs, which they could put on at the beginning of an engagement so they can barely bear the noise of muskets and cannons.

Simply firing in the air might be an effective way to stun a group of hostile native Elves, though. It would probably not take long for them to catch on and to come up with counter-measures (again, ear-muffs), but that would force them to give up their main advantage over humans at least temporarily.

Bringing a cannon and firing blanks a good distance away would be an effective means of psychological warfare to be deployed against Elven castles and cities.
Evles might specifically buy gunpowder weapons from humans for the purpose of fighting rival tribes/states.

On the other hand, if a human party was stumbling through hostile territory and encountered a wild animal (say a jaguar), they would have to think twice before shooting it, as that would alert every native Elf in the area to their presence—but fighting something like a jaguar or a rhinoceros with just polearms and swords is no less of a risky undertaking, and would make for a nicely challenging encounter.

I hadn't given much thought to orcs and wasn't even sure whether to include them at all, but if my elves are going to be such ambush predators, that would open a niche for orcs (as a sub-species/race of elves—in line with how orcs are typically corrupted versions of elves) as Savanna/Plains Elves, converging a bit to humans, physiologically. Useful as slaves to labour in the fields of the High Elves (and later human colonists)!
