Dunno if the size is comparable but having your renegade knight composed of an actual giant partially encased in some sort of dreadnaughty life support-system seems to me like a pretty cool idea. Bonus points if he actually comes across as a giant futuristic knight.

the giant is way out of scale, much bigger i think

dragons from AoS might be a good start for bio-monster heads, maybe the War Sphinx too; dragon to snake (or dinosaur to snake for some of the Lizardmen big kits) isn't too hard

Soul Grinders and Defilers are just a little bit too small for heads, but you might get some parts elsewhere

for a centerpiece model like a Knight, pick a rockstar and use them for inspiration - like the Necrosphinx head might seem only useful for Tzeentch armies based around TS, but you could also kind of turn it into James Hetfield without too much trouble
