For plurals, it depends on what kind of dwarf you're talking about. Comic relief or silly/fun --> dwarfs. A fierce, noble, grim, and impressive race that recalls somewhat the naugrim of old --> dwarves.
So to it depends on the setting. Traditional fairy tales like Sleeping Beauty, or game settings like Shadowrun? Dwarfs. LotR and most RPG setttings like Forgotten Realms, WHFB, Banestorm, and others? Dwarves.
