Treating politely and with respect, but never fully trusting them. The goal of any encounter with the Fey is to be nice enough to them that they feel no need to punish you, but boring enough that they don't take a liking to you and want to hang out with you more or offer you a gift.

Sometimes gifts from fey are just super fucking sweet and you'll have no regrets. But they are just as likely to be something that SOUNDS like a good idea but it destroys your life.

If the Fey likes you too much, you are going to be kidnapped. If you are lucky, they eventually grow bored enough with you to let you go home, and all you have to do is acclimate back to the real world after a weird amount of time has passed. If you are unlucky, eventually they tire of you and something awful happens to you.

And getting a Fey actually mad at you is just awful. You don't want none of that.

Just bow your head, compliment them in general ways, offer them something to drink, and then beg your leave because you have taxes to do. Hope they don't come back.

Absolutely terrifying if you consider the source material.
I ran a segment of a campaign based on Fey and was basically a lovecraftien soul rending horror show of incomprehensible minds, motives, situations, and sights.
I drew loads of inspiration from modern creepy-pastas as well. After all, what are monsters like slenderman and the rake but modern fairy tails.

ShindoL is a troll. A pretty damn clever one too. He's able to spin some highly emotionally moving stories out of porn plots. He does a damn good job too. It was one of many theories surrounding fey and their origins. Lots of Anon's will bunk C.S. Lewis, but 'The Discarded Image' is, if not wholly accurate, an interesting look at medieval myths and legends (if told/viewed through Lewis' incredibly catholic mindset). There's some good folk beliefs you can mine for ideas there.

It could also be used in a pure fantasy game, as a reference to the due to the dead nigh all human cultures have.

There's so much stuff you can do with that and I feel stupid that I haven't put it in one of my games yet.

Yeah there's a lot of interesting stuff you can do with it. Funnily enough your idea for necromancy is much closer to the actual traditional practice than the fantasy staple of people raising the dead to do their bidding.

Fear that fey could kill them and steal their body would a long way to explaining fey malevolence. Interestingly enough if you read deep into Tolkien's work, this is exactly what happens to elves who refuse the call to the west - they become tied to persons or things as a spirit. More benevolent fey could "share" space with a willing loving host as a ride along, though again you're taking a huge risk. Familiars and less intelligent spirits could be animals and other less intelligent creatures that became earth bound for whatever reason, which explains their magical nature and they offer a much safer soul binding opportunity for the mage as the animal lacks ego and therefore cannot seize control of your body.

This is why many witchs have cats for familiars, cats straddle the realms of life and death and frequently become earthbound

The idea that all magic has at least some root in this spirit work is also a good rationalization for why certain organized religion or anyone else really might hate magic
