Are there any role playing games with a big focus on economic endeavors?
Rogue Trader
some D&D splats (Kingmaker)
maid RPG
Shadowrun (played with "be your own fixer" style)

Hell yeah motherfucker.

It doesn't get much more economic than looting tombs and robbing dragons.
Much more exciting than selling apples, too.

Even dire apples?

You kill beasts, monsters, villains and badguys, take their stuff, sell what you don't need, and buy stuff that you can use instead. All the economics that you need.
Aside from this smarmy comment >>51451069 Rogue Trader is pretty good and fun to boot.

So I guess be a mercenary then? Of course, "mercenary" and "adventurer" aren't all that different.
Do you have any merchant republics in the games you play (think stuff like medieval Venice)?

If they don't exist, then found them.
International merchantilism & nation-building go hand in hand, and that's what high level domain play should be for.
and when you get tired, hire some new adventurers to take care of a task your character is too busy to take care of themselves, and begin your new campaign at level 1.
