Players usually go off in random directions on a whim, so too much planning is an exercise in frustration.

I typically design plots and encounters that can take place regardless of where the party goes and wing the rest.

I plan the generalities, with some more specifics if I have the time.

However I've been GM'ing on the seat of my pants for years, and it's rarely let me down.
