Some people are immortals but can be killed by decapition. It is taken for granted that "THERE CAN BE ONLY ONE!" so they duel each other with swords and do no wear protective gear of any kind. Some immortals have centuries of combat experience and killed hundres of immortals and thousands of mortals.

Personally I would go with Legends Of The Wulin and just refluff the fighting style and add some custom loresheets

Predictable GURPS.

It's super ez to make an immortal with the shit they get, and its a super good system for doing games that span long timescales.

Trenchcoats & Katanas obviously. This is literally a system for playing immortal swordfighters.
