>Every time you run any monster it turns into a horror game
Had a player tell me this. Said that whenever the group runs into monsters it turns into a horrifying build up of tension that never seems to end. The monster will be seen in fleeting glimpses and often only when it's just killed someone.

He said he liked it, but I don't really want to only run encounters one way. Do any of you get stuck running similar plots over and over again? How have you broken out of it?

Maybe you could have encounters with monsters that aren't on the hunt when players encounter them. For example, they could be wandering in the wilderness and stumble upon a monster building a nest, drinking from a pond or basking in the sun at the edge of a clearing. Something to show that slaughter isn't the only thing the monsters do.

Tension is a useful tool for a DM, but overuse can dull the players, and they'll begin to anticipate it.

Nothing wrong with using description -- environment, sounds, smells, sights, and so on -- but too much build-up can start to build tension, and it may tip players off. At best, you'll be predictable as a DM.

Surprise can be fun.
>"The canvas is thrown aside as nasty little pumpkin-headed goblins with nasty needle teeth come springing out at you! Roll Perception!"

Use descriptive anticipation
>"The bandit king shakes his head sadly at all of you as he rises to your challenge. He slowwwwly draws his blade from its scabbard with a whisper...the torchlight in the room glimmers off the blade, and you can easily see each word of the Aldori Swordlord's Oath written on the blade....the pirate king grins. 'I accept your challenge, boy'."

Use Drama
>"The girl hurls the lamp across the room, her face in tears and wrought with terrible anguish as she begins to explain to you how her mother's ghost has tormented her all these years. The lamp explodes, setting the curtains and wall ablaze! 'I AM THE WEREWOLF!' she screams! (roll initiative)!"

Use Dark Humour
>You are attacked by skeletons....but not just any skeletons...YOUR OWN SKELETONS!....Your skeleton starts beating you in the face! 'Why are you hitting yourselffff?' it whispers from your own mouth." (roll initiative).

As for plots...you'll get better with more experience. Run some AP's to get a hang for putting a story together. Make a list of plot hooks to get you going:
>look for someone
>look for something
>investigate a happening
>escort someone
>hunt down a criminal
etc.

Satan knows his business, it seems.

Don't your players have perception skills? Or do you just railroad and GM fiat shit into happening the way you want?

You ever thought about writing a bigfoot novel OP?
