How should characters act when they are drunk? Should it say anything about the character? I personally don't drink.

My character is poison immune and doesn't drink anything except fruit juices or water. But his other personality likes to mix alcohol with blood.

Depends on the characters, really.
Both on their personality,how used they are to alcohol and how much they had to drink.
There are happy drunks and sad drunks, loud drunks and quite drunks, people who keel over from one beer and people who can pound a quart of whiskey and seem sober.

Different people are different kinds of drunks so I personally think that it could say something about your character for sure. Sad drunk, happy drunk, angry or belligerent drunk, horny drunk, talkative drunk, etc...
