How would a Tabletop game based off Darkest Dungeon work?
All I know, is that it would be very high mortality.

Almost sounds like Darkest dungeons is just a video game based on a campaign, with some lovecraftian shit thrown into the story by the GM. (which honestly fits rather well).
DD doesn't have high mortality unless you either suck at it or are playing some extra challenging variant. You can literally finish the game losing just a couple of heroes.

You wouldn't play the adventurers, at least primarily. Your main characters would be the people running the town, organising things and dealing with large scale threats on the settlement scale, occasionally 'zooming in' to adventuring parties doing the dangerous work out in the wilderness.

Torchbearer is pretty bad. What OP wants to play is Dungeon World. Game has some of the best dungeon-crawling mechanics out there.
You really can't go wrong with Dungeon World. It has fast inuitive mechanics that are easy to learn, quick character creation which is essential if OP expects characters to get BTFO a lot, and the combat is both imaginative and gritty.
