Yeah, you have to mod the files - basically go into the right .txt file and alter humans to a playable race - then on the embark world map you have hit tab until the civilisation selection menu comes up and you should be able to switch to a human civilisation.

Also reposting something another anon wanted to share, a seed that has a 2212 z-level tall naturally occuring adamantium column (and 20fps because bits of the map are constantly collapsing because the column goes ABOVE the embarkation level and the ground around its upper level is collapsing from the start): http://www.bay12forums.com/smf/index.php?topic=61507.0
