Europe has been engulfed by the death plague and most of its population have died. It's been years and years, and the plague doesnt seem to go away, and few people, apparently immune from the disease, are left living. The plague is slowly spreading across the rest of the world. A group of travellers have come together to try and find the cause of this apocalypse and stop it, if possible.
Does this sound like a good scenario?
What supplies would travellers travelling on a post-apocalyptic medieval europe carry? What kind of dangers would they fight? Is using hellish monsters a good idea here? What system would be ideal for this?

Depends.
You need to figure out more what you want OP. So far its way too open ended.

in before inevitable /pol/ hijack
But if you are doing this OP, make sure you make up a fictional disease instead of using something historical like the Black Death. Otherwise you risk some snarky motherfucker "discovering" penicillin during the first session and derailing the whole concept

Go read Narcissus and Goldmund for a good novel about it.

I dont know what do use to represent danger yet - society of bandits that are trying to form some type of government? Monsters created from the plague? Satan's minions?

>"Discovered" gunpowder
was it a result of months/years of alchemical research or was it

Consider finding a copy of 'A Distant Mirror: The Calamitous 14th Century'. It's a pretty in-depth look at the societal breakdown during and after the black death.

If it is done in Mouse Guard, then yes.
