I prefer games with fantastic races, but human-only PCs.

Lets you play up the fantastic elements, from myths and the like. Encountering an elf or a fairy is a big deal (and is usually not a good thing because they will fuck you over six times to sunday and possibly eat you), a dwarven-made thing is a priceless artifact in both quality and reputation, and so on.

My personal setting tries to strike a balance.
Orcs and goblins are fairly mundane (although they are mostly baddies). Savage and brutal, but not particularly otherworldly.
Dwarfs are borderline - they are fairly ubiquitous and not very hard to find, but they're weird as hell. Their crafts are legendary but they're not too keen on selling.
Elves are creepy fairies that appear almost entirely human in physique and behavior until they don't. And then you regret not running away as soon as they showed up.
Any parties should be majority human for flavor reasons, but an odd dwarf or orc PC can spice things up a bit.

Actual classical fantasy is for most part not myuch less "low magic" and "gritty" than GoT.
No matter if you're talking about Lord of The Rings, Conan, Black Company, Eternal Champion, even fucking Earthsea. OK maybe not AS gritty and sometimes not as low magic, but still way closer to it than typical d&D setting, which is most likely what OP means by "old school" kek high fantasy.
They just focus on different themes that court intrigue and betrayal, be it bloodshed and survival in savage and unforgiving world (Conan), a desperate and unlikely to succeed attempt of saving the world from the darkness, in which even in the case of victory there will be steep price to pay (LotR), or band of ordinary soldiers thrown into middle of an absolute shitstorm (Black Company). That doesn't make it less low magic, less grity and less dark.
Really, fuck you if you thing GoT is anything new in this aspect.

In general I prefer old school high fantasy, but I like the more reasonable ones like Legends of Ethshar or similar.

I don't like the concept of "evil" being a real tangible thing and there being some "forces of evil" hell bent on destroying whatever is good and bla bla bla, and I feel like a lot of old school fantasy has a lot of that.

So in the end I like fantasy with fantastic world, many races and tons of magic, but I want conflicts to be between just people, not some clearly defined "good vs evil."

While you're definitely right, for me it's more that LoTR feels like the end of an age. Even though good triumphs in the end, it feels like something has faded from the world.

LotR is pretty grim when you think about it. The evil leading innumerable armies is pretty much indestructible force of evil. The closest thing it has for "big good" who isn't going mad or in awe of the enemy are a decrepit old man-angel sneaking around, not entirely trusted by anyone who knows his intentions and a half-elf lord who lives in the middle of hostile wilderness with his house-kin who are dwindling in number.

All good lands are either decaying wildernesses, under the control of- or under mortal danger by the previously mentoned indestructable evil.

I think this is what LotR does better than most modern fantasy. Too powerful/organised good guys don't do good for story in my opinion.

I think the aesthetic is more pleasing and its more engaging. It draws you in and you find yourself staring at the artwork asking who the characters are, whats going on, whats the world like and you generally want to know more. I've seen a lot of newer fantasy art which is more grimdark or just "Cool knight" and you dont get the same effect.

Game of Throne is something that dulls the fantasy genre. At its core its an ok written series that gets overly praised and is defining what people consider "fantasy". So we can expect a good deal more generic "dark and gritty" fantasy settings which only bring out fantasy elements here and there for the sheer sake of shock value.

Mind you, I like Game of Thrones. But I also realize that Martin's writing is falling fast, and that in many ways its rather lazy writing. It ended up to popular and now its what people think when they think fantasy.

For real though, Black Company is basically the perfect fusion of old school high fantasy and human-centric grimdark. The sorcerers and big evil whatsits are written masterfully and he constantly puts new spins on things (Kina being shortsighted and kind of stupid, "Deadman Spells" as a pseudo-immortality instead of 'lol i put my soul in this macguffin i hid behind some riddles and shit,' etc), and the fantasy elements are high to the point of being bizarre, while the grimdark human element keeps things grounded and avoids pic related.

Are they really grim? Evil either persists being so and gets killed after being thoroughly humiliated (Takhisis), morphs into regular dudes with some issues (draconians, knights of Takhisis, Sargonnas) or just plain grows up and starts pulling its weight (chromatic dragons). Attempts to go 40k on Krynn end up with everyone and their dog piling on you for epic ass-whooping.

Granted, it's been a while since I've last checked that world.

It felt grim to me because we get a book before introducing us to the next generation, setting up for great stories with these characters as well as seeing the last generation enjoying the peace they earned.

Then summer flame comes along and kills a chunk of that potential in killing a few of those new characters right off the bat, especially those who would have changed the bleak tone, ended some conflict on a shit note. (tanis and his son) I understood the bittersweet yet hopeful ending but it was still a downer.

Then the series after that has dragons pulling a mortal kombat and draining souls from each other to replenish their magic. Like I said, felt grim at the time and I stopped reading a while.
