Are there any space marine chapters who make heavy use of chapter serfs in combat or just more use of them in general? (EG vehicle pilots, battlefield logistics, etc)
What would such a chapter be like?

All chapters with fleets use serfs to man them. It takes hundreds of men just to load a single macro cannon, the only Space Marines on a chapter ship are the ones being transported to the warzone and maybe the captain.

Autoloaders are a thing since 3e, that manual loading thing is mostly for replacement of the broken autoloaders with no spare parts. The world isn't that grindark anymore

Torpedoes are the ones that are typically hand-loaded (which is why you specifically have to reload them in BFG), but macro-weapons having autoloaders isn't uncommon.

You could do that in-game with combi-weapons. Each serf model doesn't fight, but acts as a token that gets removed when the one-use non-bolter part gets fired.

Slave labor is done by menials or servitors, serfs are employed in roles like officers and crew.
I believe SM ships also use serfs as armsmen in defense against boarding actions
