Most art depicts the thing getting killed. There's complicated religious allegory late in the myth's development conflating the virgin with Mary, and the death of the unicorn as similar to Christ's sacrifice somehow. It's complicated stuff that I'm almost certainly butchering, but hopefully you get the gist.
