Take ponyta and rapidash, the two fire horses, for example. Their mane and tail are made of fire and extend up far enough that trying to sit on one's back will burn you. If it trusts you, though, it can make its fire just kinda... not do that. Somehow. Making fire not burn defies at least one physical law, possibly several.
