The way paladins work, yes they are and it only makes sense because it's a game.
In a fantasy setting with any ressemblance of life where living beings exist and aren't just pawns of RNG in a carefully constructed obstacle course. All sentients would be able to chose wether they will act morally or amorally and that includes sentient undead.
Eating people isn't immoral, it's unlawful and dangerous among humans, but what about gnolls, draconians, dragons and all other sentients for whom we're just another animal? It's just food.
